Feed the Soul: Slow Cooker Chicken Pot Pie

I absolutely love to cook. It's in my heart to feed others.


I grew up with amazing women and men that slaved and prepared food for their family to savor. Almost all of my best memories consists of loud family around the kitchen table with big appetites for seriously delicious authentic food.


When I go to my home away from home to visit Jami (technically my ex-mother in law but she is like a mother to me. I'm incredibly close to her that referring to her as anything other than family just isn't right) I almost always request for her chicken salad and Neiman Marcus cookies.


For College Football Game Day's, my dad makes his Marine style chili that has just the right kick and loads of flavor.


Both of my grandmothers were phenomenal cooks - my Noni (my grandmother on my Puerto Rican side) made the best Puerto Rican rice (I recently attempted to make it for the first time and will make again to share with you soon), and my Momo (my grandmother on my Mexican side) made the most amazing menudo and homemade tortillas. God bless their souls - I know they are salsa dancing in heaven right now as I write this.


Food is such a key component to love + family + good times. My kitchen is in the process of being remodeled but everything I cook with is so personal to me - my crock pot was given to me by Jami, my metal spoon + Italian Olive Oil was my Noni's - these items that have been passed on to me are so dear to my heart and adds just that much more love to my cooking.


Being that I live in Michigan, it's winter and cold, I decided to make my Slow Cooker Chicken Pot Pie Soup to warm up and fill the bellies. Not only is it practically hassle free (oh, the joy of slow cookers!), but the aromas + smells fill the home all day, building the taste anticipation!
